Ice cream never fails to win the plaudits. Whether you’re planning a summer kid’s party or organising a garden get together with a few friends, putting ice cream on the menu will ensure you’re forever held in high regard as a host – especially if that ice cream is homemade.

1. Mango and Ginger Ice Cream

A sophisticated twist on the original Mango ice cream recipe…

Serves 4 

Ingredients:

225ml full fat cream

50ml single cream

4 large egg whites

2 large mangoes

100g caster sugar

2cm root ginger

Directions:

1. Roughly chop the ginger.

2. Beat the egg whites in a bowl until frothy. Beat in the caster sugar.

3. Peel and chop the mangoes and blitz in a food processor to form a smooth puree. Add the egg mixture and blitz again.

4. Mix the mango puree with the creams and pour into the ice cream maker. Set the timer and let the ice cream maker churn until completion.

5. Serve immediately or transfer the ice cream into a freezer-proof container and freeze.



2. Tutti Frutti Ice Cream

You’ll need lots of ingredients for this one, but the results are very much worth it!

Serves 6-8

Ingredients:

300ml double cream

2 egg whites

120g caster sugar

60g glace cherries, slices

60g ready-to-eat dried apricots, diced

30g candied angelica, diced

30g candied pineapple, diced

30g preserved ginger, slivered

30g seedless raisins, chopped

60g toasted almonds, slivered

30 pistachios, roughly chopped

2tbsp kirsch

1tbsp amaretto

Directions:

1. Whisk the egg whites in a mixing bowl until stiff. Whisk in half of the caster sugar before folding in the remaining sugar.

2. Whisk the cream in a mixing bowl until it begins to thicken. Add the kirsch and amaretto and continue to whisk until thick. Fold in the egg white mixture and add the remaining ingredients. Mix until all ingredients are fully incorporated.

3. Pour the ingredients into the ice cream maker and set the timer. Allow the machine to churn to completion.

4. Serve immediately or transfer to a freezer-proof container to freeze.



3. Blackberry Ice Cream

Delicious and super easy to make…

Serves 4-6

Ingredients:

300ml whipping cream

75g caster sugar

30ml water

500g blackberries

Directions:

1. Place the blackberries, sugar and water into a sauce pan and simmer until the blackberries are soft. Using a strainer and spoon, sieve the blackberries into a bowl and set aside to cool before chilling in the refrigerator for 1 hour.

2. Churn the chilled puree in the ice cream maker until it thickens up. Pour in the cream and continue to churn until firm enough to scoop.

3. Serve immediately or transfer to a freezer-proof container to freeze.



4. Lemon and Whiskey ‘Gold Rush’ Ice Cream

A grown-up twist on the classic lemon ice cream recipe…

Serves 6-8

Ingredients:

500ml double cream

200ml single cream

5 large egg yolks

225g caster sugar

Juice of 5-6 lemons

50ml bourbon

1 lemon, zested and finely grated

Directions:

1. Pour the double cream, single cream and lemon zest into a saucepan and bring to a simmer over low heat. Remove from the heat and leave to cool for 5-10 mins.

2. Beat the eggs and sugar together in a bowl. Slowly beat in the cream mixture until it resembles custard.

3. Pour the custard mix back into the saucepan and heat gently until it is thick enough to coat the back of a wooden spoon. Leave to cool before chilling for 30 minutes in the refrigerator.

4. Stir the lemon juice and bourbon into the cold ice cream mixture and pour into the ice cream maker.

5. Set the timer on the ice cream maker and churn until firm enough to scoop.

6. Serve immediately or transfer to a freezer-proof container to freeze.



5. Strawberry Cheesecake Ice Cream

Make your own version of the Häagen-Dazs classic…

Serves 6

Ingredients:

225 mascarpone cheese

125g golden caster sugar

225ml single cream

1tbsp lemon juice

½ tsp vanilla extract

175g strawberries, pureed

Directions:

1. Pour all of the ingredients into a bowl or blender and blend until smooth.

2. Pour the mixture into the ice cream maker and set the timer. Churn until completion.

3. Serve immediately or transfer to a freezer-proof container to freeze.
