How to Make Chilli Hot Sauce

Put it on your eggs, whisk it into your salad, splash it on your chicken wings – hell, drink it straight from the bottle (don’t actually do that). Serve it however you like, just make sure you have a jar of this double chilli hot sauce in your life at all times. 

The recipe is a simple one, but it does require patience. Once the ingredients have been mixed for the first time, you’ll need to wait five days for the mixture to ferment before indulging. Good things come to those that wait, though, so it’s all good.

What you need: 

200g fresh serrano chilli 
20-40g fresh birds eye (thai finger) chilli 
4-6 garlic cloves 
3 tbsp light brown sugar
1 ½ tbsp kosher salt 
1/3 (80ml) cup water 
1/2 (120ml) cup apple cider vinegar

What you need to do:

1. Give the chillies a good, thorough wash. Chop them up and throw the stalks in the bin. 

2. Pop the chillies into a blender, along with the garlic, sugar, salt and water. Pulse gently at first. When the ingredients are liquidised, pulse thoroughly before transferring to a glass bowl (avoid using a plastic bowl here as it might react to the chilli mixture). 

3. Cover the bowl loosely with cling film so that the mixture can breathe, but not be contaminated. Pop the bowl in a cool, dark place for 3-5 days to ferment, stirring each day to help the process. You’ll know the sauce is fermenting when you see small bubbles appearing. 

4. By day five, there should be small bubbles in abundance – this means your mixture is ready for the next step. 

5. Pop the sauce back into a blender and add the vinegar. Pulse for a few seconds to mix the ingredients. 

6. Place a fine mesh sieve over a pan and pour in the mixture. Use a spoon or spatula to force the mixture through the sieve until you’re left with a dry paste. 

7. Put a pan over a medium heat and bring the liquid to a boil. Let the liquid simmer until you achieve the desired consistency. 

8. Transfer the liquid to a sterilised jar.
