How to Make Eggnog

You’ve heard of eggnog. You know it looks a lot like milk. And you know that North Americans drink it by the gallon during the festive season. But do you know how it’s made or, crucially, what it tastes like?

Well, it’s made mainly from eggs, milk, cream and alcohol and tastes like spiced melted ice cream.

You’ll either love it or hate it.

Give this recipe a go and find out for yourself.

What you’ll need (Serves 10-12):

6 medium eggs

500ml whole milk

400ml double cream

150g caster sugar

175ml rum

175ml bourbon

1tsp grated nutmeg

What you’ll need to do:

1. Before you start, using a stand mixer or hand blender for this part will save a lot of effort. Crack the eggs and separate the yolks from the whites. Place the yolks and two-thirds of the sugar into a bowl and whisk until a thick mixture has formed.

2. Pour in the milk, cream, rum and bourbon and stir until the ingredients have fully combined. Cover and refrigerate overnight.

3. Whisk the egg whites until loose peaks are formed, before slowly whisking in the remaining sugar.

4. Remove the mixture from the fridge and give it a good whisk. Gently fold in the egg whites.

5. Divide the eggnog between glasses. Grate nutmeg over the top of each glass and serve.

 If you’re worried about egg safety and the use of raw eggs in this recipe, pasteurised egg whites work just as well.
