This recipe is packed with flavour and ready to serve in less time than it takes to toast your bread. The ingredients can be scaled depending on how much you want to make, but here’s what we used…
What you need:
50g fresh basil
200g pine nuts
120ml extra virgin olive oil (plus extra if needed)
2 cloves garlic
50g parmesan, grated
Salt to taste
What you need to do:
Throw everything into a blender and pulse until you achieve the desired consistency. If the ingredients begin to look a little dry, pour in some more olive oil.
