Huevos Rancheros

As our inaugural weekly world breakfast blog post, we’re going to kick off in style with a Mexican classic: huevos rancheros.

Huevos rancheros – or “rancher’s eggs” – is a traditional Mexican breakfast made from eggs, tomatoes, chili, cheese, beans and vegetables all sat atop fried tortillas. Not only is the dish a hearty way to start your day, readers nursing sore heads this morning will be pleased to learn that it’s a great hangover cure too. Bonus!

What you’ll need:

1 onion, finely sliced

2 cloves of garlic, finely sliced

2 red peppers, finely sliced

2 fresh chillies, finely sliced (more if you like it hot!)

3 bay leaves

1 teaspoon of dried chilli

Olive oil

Salt and pepper

2 x 400g tins of chopped tomatoes

6 large eggs

6 tortillas

Grated cheese of your choice to serve

What you’ll need to do:

Heat some oil in a pan and add the onion, garlic, pepper, dried and fresh chillies, bay leaves and a salt and pepper. Stir and cook for around 15-20 minutes until all the veg is soft and caramelised.

Then, pour in the tinned tomatoes and use the back of a wooden spoon to mix and mash them up a little. Bring to the boil then lower the heat and simmer the sauce for a further 5 minutes or so to reduce.

Once the sauce has been reduced to a thick stew, use your spoon to create 6 little wells ready for the eggs. Gently crack all the eggs in the wells (it’s a good idea to crack them in as quickly as possible so they all cook around the same time), season with salt and pepper and allow them to poach in the rich sauce. Put the lid on the pan and cook for around 3-45 minutes or until the eggs are to your liking.

While the eggs are doing their thing, warm the tortillas as per the packet instructions. Once done, spoon an egg with all the tomatoes and vegetables on each tortilla and sprinkle with cheese. Easy peasy.
