Savisto Classics: Sweet Potato, Carrot & Chilli Soup

When you’re feeling a bit under the weather, bogged down with a bunged up nose, bad head and a sore throat, a good bowl of soup (particularly this one) is what’s required to get you back on the road to full health. It’s comfort food that’s good for you. 

This classic sweet potato, carrot & chilli recipe isn’t just an immune-booster; it’s a winter warmer that’s happens to be bloody delicious. And, as with the majority of our recipes, it’s really easy to make. 

What you need:

1 large onion 
1 large chunk of ginger 
2 cloves garlic 
2 whole chillies 
8 carrots
2 sweet potatoes 
800ml vegetable stock
Dollop of crème fraiche (optional)
Black pepper (optional)

What you need to do:

1. Finely chop the onion, garlic, ginger and chilli. Pop them all into a pan and lightly cook for a few minutes until the onion turns soft and translucent. 

2. Chop up the carrots into small chunks (don’t worry about peeling them). 

3. Peel and chop up the sweet potato in chunks and add them to the pan along with the carrots. Pour in the vegetable stock and cook on a medium heat until the vegetables are nice and soft. 

4. Blend the mixture together using a hand blender (preferably a Savisto one: http://bit.ly/2g1JvQh ;-). Alternatively, you can transfer the soup to a countertop blender and blend it that way. 

5. Transfer to bowls and serve with a dollop of crème fraiche.
