For the few days each year that they’re in our lives, pumpkins are a big deal – we love them, care for them and carve them up to look really cool. Popularity is short lived, though. No sooner has Halloween passed that pumpkins are sent out with the bins. But that needn’t be the case. Pumpkins have a lot to offer beyond being jack-o-lanterns and can be upcycled in numerous delicious ways.

Here are a few of our favourite recipes to prove that a pumpkin can be more than just a pretty (scary) face.

They don’t celebrate Halloween in India, but they do celebrate pumpkins, in all their tangy glory. This layered curry merges together sweet and spicy flavours for a unique take on the popular masala.
