With breakfast being the most important meal of the day and all, it makes sense that ful medames is Egypt’s national dish. Mashed fava beans are central to the meal, with additional ingredients thrown in to complement their natural sweetness.
Like many staple foods, ful medames is widely accessible and easy to make. This recipe shouldn’t take any longer than five minutes to complete and will set you up right for the day.
What you’ll need:
2 (450g) tins fava beans
60ml fresh lemon juice
60ml olive oil, plus extra for serving
4 cloves garlic
2tsp ground cumin
2tbsp, chopped parsley
¼ tsp salt
¼ tsp cayenne
What you’ll need to do:
1. Drain and rinse the fava beans and put them into a small saucepan. Cover with water and bring the boil. Cook the beans for 8 minutes, drain and transfer to a bowl.
2. Peel and mash the garlic cloves and add them to the bowl with the beans. Add the lemon juice, cumin, cayenne and salt. Drizzle on the olive oil and mash everything together, crushing the beans to the desired consistency.3. Transfer to a plate, sprinkle on the parsley, drizzle on a little more olive oil and serve with chopped hard boiled eggs or pickled veg.
