A nice hearty bowl of soup is a great way to set yourself up for the day. In Colombia, locals like a particular kind of soup for breakfast: changua. It sounds exotic, but it’s basically just a poached egg and milk soup with the addition of scallions and coriander. It’s really easy to make and healthy too. Plus, we hear it’s great for hangovers – something worth bearing in mind the next time you wake up worse for wear!  

What you’ll need (Serves 4):

500ml milk 

500ml water

4 eggs

4 tbsp coriander

3 scallions, chopped

Pinch salt and pepper

4 slices of fresh bread (toasted if you like)

What you’ll need to do:

1. Chop up the scallions and coriander.

2. Pour the milk and water into a stockpot or deep pan and bring to the boil. Add the scallion, salt and pepper and cook on high heat for 3 minutes.

3. Reduce to medium heat and add the eggs to the pan, cracking them in carefully so the yolk doesn’t break.  Cook for a further 3 minutes.

4. Place a teaspoon of coriander into the bottom of each bowl. Carefully spoon the eggs from the pan into the bowls.

5. Pour the broth into the bowls, over the eggs and coriander. Serve with bread.
