World Breakfasts: Fry Jacks


This week’s world breakfast comes from the small Central American country of Belize, where Fry Jacks are the morning meal of choice. Fry jacks are really easy to make and can be served like pancakes, alongside savoury foods such as eggs and refried beans or sweet toppings like honey or butter.

From adding the ingredients to the mixing bowl to plating them up from the frying pan, a batch of Fry Jacks takes just 30 minutes. Give them a go and let us know how you get on.

What you’ll need(Serves 4-5):

280g plain flour

3tsp baking powder

225ml water

1tbsp vegetable shortening (lard will do)

½ tsp salt

450ml vegetable oil for cooking

What you’ll need to do:

1. Pour the flour, baking powder and salt into a large mixing bowl. Add the lard (vegetable shortening) and knead the dough. Keep adding water to the dough as you knead and work it through until it’s clump-free and smooth. Set the dough aside for 20 minutes.

2. Pour the oil into a frying pan and place it over a medium heat.

3. Turn the dough onto a lightly floured worktop and roll it out into a 12-inch round. With a sharp knife, cut the dough lengthwise into 2-3-inch strips. Now cut crosswise into 3-inch strips, or whatever size you prefer.

4. Place the strips of dough into the frying pan and cook for about 2-3 minutes on each side, until golden brown.

5. Serve warm with eggs, sugar, honey, butter, refried beans and/or cheese – whatever takes your fancy!
