Tasty, healthy and easy to make, Indian oats kheer is perfect for those cold, miserable winter mornings. We’ve opted for pistachios and almonds for this recipe, but feel free to top with whichever nuts you prefer.
From prep to bowl, this recipe should take no longer than 20 minutes.
What you’ll need (Serves 3):
70g pinhead oats
340ml non-dairy milk (soya milk, oat milk or almond milk)
8 almonds, chopped
8 pistachios, chopped
1/2 tsp ground cardamom
Pinch of saffron (optional)
What you’ll need to do:
1. Put a small saucepan over high heat. Pour in the oats and milk and bring to the boil, stirring regularly.
2. Turn down the heat to low-medium and add the raisins, dates, cardamom and saffron. Cook for 15 minutes, stirring regularly.
3. Divide the oats kheer into bowls, top with nuts and serve.
