World Breakfasts: Rösti

Rösti is considered a national dish in Switzerland. We have our own version of it in the UK called the hash brown, which is the same but smaller and with a less attractive name.  

Rosti yields a good plate full of fried potato that can be eaten as a complete breakfast meal or, more commonly, served alongside Spinat und Spiegelei (spinach and fried eggs) or cervelat sausage.

This recipe takes around 30 minutes and easily serves 4. Enjoy!

What you’ll need:

1kg Maris Piper or King Edward potatoes

25g butter

2tbsp olive oil or sunflower oil

Salt and black pepper for seasoning

What you’ll need to do:

1. Boil the potatoes in a pan of boiling water for 10 minutes. Drain and set aside to cool slightly. When dry enough to handle, squeeze as much moisture as possible from the potatoes.

2. Peel the potatoes and grate into a large bowl. Generously season with salt and pepper and mix to ensure the seasoning is evenly distributed.

3. Put a frying pan over low-medium heat and pour in the oil. Add in half the butter. Once the butter has melted, pour in the grated potato and press it down using a spatula or the back of a spoon so that it forms a compact cake. Cook for 8 minutes until golden brown and temporally remove so that you can add the rest of the butter to the pan. Return the potato to the pan (cooked side up) and fry for a further 8 minutes until the underside turns golden brown.

4. Cut and serve or place on a roasting tray for reheating.
